| E1105 is a food additive
approved by the European Union (EU).
It is a natural protein that
acts as an antimicrobial
preservative by breaking down bacterial cell walls.
The common name for E1105 is lysozyme.
E1105 is an enzyme present in tears, human milk, blood,
saliva and sweat.
This protein works to catalyse hydrolysis reactions
within the body.
Conjunctivitis can
be caused by a lack of E1105 in the membrane covering
the eye. As with all proteins, E1105 can act as an allergen
to some individuals. Examples of food/drink products that may include E1105:
Egg whites.
